Led by Rebecca, James, Jenn, Lora, Chelsey and Mike, our team brings a level of professionalism rarely seen in new startups. They bring to TOF + B their experience and knowledge from their extensive backgrounds in customer relations, business and finance operations, brewing production, product development, event coordination and engagement management.

Rebecca

Rebecca Barry

Head Brewer

Rebecca is a New Jersey native with a wealth of knowledge and experience in producing world class lagers and ales. While earning her bachelor’s degree at Manhattan College, Rebecca worked at a beer bar with an extensive tap list and was introduced to the world of craft beer.

Upon learning of the UC Davis Master Brewers program she decided to move to California and attend the prestigious school. Upon graduation Rebecca got her start as a brewer at Weyerbacher Brewing Co and has spent the last 3.5 years exclusively brewing lagers at Anheuser Busch-Newark. Rebecca joined the Tall Oaks Farm + Brewery team as Head Brewer with an enthusiasm for brewing lager beer.

When not filling the tanks with delicious beers she enjoys dancing with reckless abandon, sipping on bottle conditioned pale ales (specifically one with a green label), and taking road trips to new places.

James

James Evans

Director of Brewing Operations

Hailing from Northern California James began his journey in the brewing industry as an avid home brewer that decided to make his passion into a career. Since attending UC Davis Master Brewers Program in 2018 he has brought exceptional leadership, quality, and a strong work ethic to every position.

His experience includes working as Lead Brewer at 21st Amendment Brewery and Head Brewer at Riverhorse Brewing Co. Most recently James spent two years as Head Brewer at Tall Oaks Farm + Brewery’s sister brewery Bradley Brew Project.

While away from the brewhouse James enjoys smoking meats, rooting for the Oakland Raiders, and shouting out the names of birds that come into view.

Jen

Jenn Donatelli

Front of House Manager

Jenn had her first taste of bartending making Brandy Alexanders for her grandfather and fell in love with the nuances of mixology. She made the switch from the corporate world to bartending 17 years ago and never looked back.

In 2020, she became a familiar face in the Monmouth County craft beer industry and is always on the hunt for a delicious but rare brown ale. Prior to her role at Tall Oaks Farm + Brewery, Jenn held roles at other craft breweries including most recently spending over a year as the Lead Bartender at Bradley Brew Project.

If you visit the tasting room, you can expect to find Jenn dishing out a friendly dose of sarcasm and sharing her extensive knowledge of lagers and ales, soccer, and whisky; her Irish roots run deep!

Lora

Lora Brower

Lora approaches her role at Tall Oaks Farm + Brewery with a family-first attitude – a motto that is evident by her role as a stay-at-home mom for the past eight years. Prior to motherhood, she served in the non-profit industry as a Corporate Development Manager, where she worked within communities and companies to organize events and raise money for The Leukemia & Lymphoma Society. 

She brings a passion for event planning and an affinity for helping others create everlasting memories. The stunning backdrop of Tall Oaks Farm + Brewery offers precisely that, and Lora, with her meticulous attention to detail and extensive coordination expertise, is eager to elevate your craft beer experience to new heights.

When she’s not busy booking private events at the brewery, you can find Lora lifting weights, sipping on iced coffee from her favorite local coffee shop: Paired, walking or running at the beach or park, spending quality time with her family, or simply running around fulfilling “mom-life” duties at school, home, and extracurricular activities.

Chelsea and Mike

Chelsey DeMarino-Ziolkowski

Co-owner, CEO

Chelsey is a dedicated entrepreneur, devoted mother, and influential figure in the brewing industry. A proud graduate of Monmouth University with a bachelor’s degree in health science, Chelsey’s journey has been marked by both academic achievement and entrepreneurial success.

As a mother of three daughters, including 10-year-old twins and a 5-year-old, Chelsey derives immense joy and fulfillment from her family life. For the past seven years, she has served as a driving force behind Bradley Brew Project, a beloved brewery that has become a cornerstone of their community. Chelsey’s commitment to excellence and creative spirit has further manifested in the successful operation of Bradley Brew Project, which she continues to run and operate for the last five years.

In 2022, Chelsey expanded her entrepreneurial ventures by opening Paired, a captivating coffee shop and market. Her belief in the power of pairing different experiences and flavors reflects her dedication to creating unique and memorable moments for her customers.

Prior to her roles at Bradley Brew Project, Chelsey honed her skills in the service industry, serving as the Bar Manager of a popular craft beer bar in Jersey City. Alongside her bar industry experience, Chelsey also brings a unique background as a former postpartum doula, offering crucial support to families during their newborn journeys. With a rich blend of expertise in health science and a proven track record in the brewing and service sectors, Chelsey remains a driving force in both her professional and personal pursuits.

Michal Ziolkowski

Co-owner, Business and Finance Operations

Mike began his craft beer journey in the late 2000s enjoying beers like Double Simcoe by Weyerbacher and Yakima Glory by Victory Brewing. Shortly after, he started homebrewing on a regular basis, rarely making the same batch twice – his preference for variety while creating approachable beer led him to contemplate opening his own brewery.

In 2018, Mike and his business partner Chelsey opened the successful microbrewery Bradley Brew Project in Bradley Beach, NJ. Mike continues to support BBP in Business and Finance Operations, while helping to grow the business from 170 BBLs brewed annually to about 1,000 in 2023.

In his role at Tall Oaks Farm + Brewery, Mike will play a similar role while also supporting the business’ growth strategy. In his spare time, Mike enjoys spending time with his wife, kids and dogs and sneaking in a workout or two in his garage and on his Peloton.
